Farmer's Market Salad



So, after last night's rather heavy meal with the homemade pizza, I was craving something much more lighter tonight for supper. Well, when I arrived at school today, I was pleasantly surprised to hear that the farmer's market had returned to campus!
At Brock, we are very lucky to have a farmer's market every Friday from 11:30-1:30 from June to September. There are always lots of mouthwatering and fresh produce and baked goods. But this year, we are lucky to also have cheese and meat vendors. Lovely! I am particularly fond of the honey vendor....she is Yvonne Harvey, and is owner of Harvey's Honey. There are so many honeys to choose from, and they really are sensational. I have had the opportunity to try the lavander infused honey, the blueberry honey, and the black locust honey. Unfortunately, Yvonne wasn't at the market today at Brock, but hopefully we'll see her back very soon. I need more honey! :)
Everything looked so good at the market...I really do need to restrain myself in these types of situations. I think I did pretty well....and came away with:
- tomatoes, snap peas, Boston bibb lettuce, romaine lettuce
- organic honey walnut sourdough bread (this bread is to DIE FOR!!!) from

So, with all of this wonderful, fresh, and local produce...a salad was very much in order for tonight! And since I'm by myself tonight, this salad serves 1.
Spring Honey Salad
3 cups torn, clean lettuce - Boston bibb, green or red leaf, or romaine are nice
1/2 large, ripe tomato, sliced into wedges
1/4 cup fresh snap peas, removed from pod
*1 oz honey goat cheese, or regular if you can't get the honey flavour
2 tsp extra virgin olive oil
1/2 tsp dijon mustard
1 tsp honey, whatever you like - I used blueberry honey
1 tsp fresh lemon juice
salt & pepper
Arrange salad on a large plate. Season generously with kosher salt and pepper. Whisk together dressing, and gently pour over greens.
Serves 1
I served this salad with a slice of the honey walnut bread I purchased today from the market. I topped that with a slice of BellaVitano cheese from Chez Fromage in Fonthill (I will be speaking much more of this place in the near future I'm sure!)...and a drizzle of blueberry honey. Divine!
*I believe I have found the best goat cheese in the world. In fact, I am certain of it. First of all, I don't think I've ever met a goat cheese that I didn't like...but once I came across honey goat cheese, I truly fell in love. This goat cheese is not only fantastic on any sort of salad, it's truly amazing inside of an omelette...just a simple cherry tomato omelette with fresh parsley, thyme or basil...with a few lumps of honey goat cheese inside....it'll melt into a pool of sweet creaminess in the omelette...truly amazing. The only honey goat cheese I have managed to find is by Celebrity. They have many other flavours as well....I am on the hunt for the rum & raisin. How amazing would that be in an endive salad with winter fruit?
