Morning Waffles



So, I just finished whipping up a batch of some yummy waffles, made with my new mini waffle iron. This was such a great find for me (at HomeSense)! I adore the size of these little waffles. Portion control, and seeing more than just 1 waffle on your plate is wonderful! They crisp up nicely, but still remain very light and 'airy'. Lovely.

I've paired them with a delicious banana cream, real maple syrup, and freshly sliced strawberries. Is your mouth watering yet?

Oh, and I thought after my first post yesterday, I should introduce you to my husband, who I'm sure thinks that I've lost my mind by starting a blog. :) Yes, his name is James.

Whole Wheat Waffles with Banana Cream

1/2 cup whole wheat flour
1/2 all purpose flour
1/2 tsp baking soda
1 tsp sugar
3/4 tsp baking powder

1/2 tsp salt
1 egg

1/2 cup plain, 2% yogurt

1/2 cup skim milk

1 tbsp butter, melted

1/2 tsp vanilla extract

In a medium bowl, combine yogurt and milk, mix, and set aside.

Combine dry ingredients in medium bowl, mix well, set aside.


Melt butter in a small bowl.


Whisk egg into yogurt and milk mixture. Add vanilla and melted butter, mix well.
Add wet to dry ingredients, and whisk to incorporate.

Spray waffle iron with non-stick spray. Heat over med/high heat. Add 1 heaping tbsp of batter into each waffle well. Flip with non-metal flipper or heat safe spatula when waffles start to bubble and edges look dry, about 1-2 minutes. Cook for another 1-2 minutes. Remove onto a large plate, stick in warm oven (170 F) until ready to serve.

Makes 12 mini-waffles.


Banana Cream


1 medium very ripe banana, mashed
1/2 cup plain, 2% yogurt


In a small bowl mix together banana and yogurt. Set aside in fridge while you prepare waffles.
